Ethlyn is a BUSY LITTLE BEE (in part to keep from existential crisis w/r/t what's going on with her family at home) and her day job here is working in a clinic nearest to the farms--in addition to healing she also picks up a lot of the errands, like picking up supplies from shops in town or going on lunch/coffee/tea runs. She also does a lot of horseback riding around town, is learning to cook and use the limited technology around here, and practices her swordsmanship.
The other major thing she does is run the Arztenritter, aka the horseback emergency healer brigade, so she spends a lot of time helping people to practice their riding and first aid skills.
